Ingredients:
• 4 cups kale or mixed greens
• 1 small butternut squash (peeled, cubed, roasted)
• 1 apple (thinly sliced)
• ¼ cup dried cranberries
• ¼ cup chopped pecans or walnuts
• Optional: crumbled goat cheese or feta
Maple Dijon Vinaigrette:
• 2 tbsp olive oil
