Week 3
Sweet Potato & Black Bean Tacos
Dinner is an opportunity to refuel and relax. Sweet potatoes are rich in beta-carotene, while
black beans provide protein and fiber. This combination supports satiety and overall nutrition
while keeping meals flavorful and comforting.
Recipe:
● 1 large sweet potato, peeled & diced
● 1 can black beans, drained & rinsed
● 1 tsp olive oil
● 4 small corn or whole wheat tortillas
● Optional toppings: avocado, salsa, cilantro
Instructions:
- Toss sweet potato with olive oil and roast at 400°F for 20 minutes.
- Warm black beans in a pan.
- Assemble tacos with sweet potato, beans, and toppings of choice.
Prepare these tacos for dinner at least once this week and try customizing the toppings to suit
